Semi-sparkling white wine from Pinot Noir grapes
Location of the vineyards: Solinga valley, Canneto Pavese (PV).
Soil: gravel-sand soil; vineyards facing south; wide temperature range between day and night.
Grape: Pinot Noir (100%) vinified as a white wine.
Vinification: we hand-harvest the grapes in crates, carefully selecting the best ones. The clusters are then destemmed and pressed and the skins are removed. The resultant must ferments in temperature-controlled stainless steel vats. The must is then racked and left to stand. After the secondary fermentation in temperature-controlled stainless-steel vats, the wine is bottled.
Tasting notes: slightly sparkling wine; pale straw-yellow colour with light green and copper highlights. Intriguing nose with floral notes of chamomile and wild flowers, and fruity notes of wild berries and tropical fruit. Crisp and lively palate; refreshing creamy bubbles.
Pairing suggestions: excellent as a pre-meal drink, it goes well on starters, vegetables, white fish. Try it on veal with tuna sauce.
Service temperature: best served at 8-10 °C in a tulip-shaped glass.
