Vino bianco (vino vivace)
Location of the vineyards: Solinga Valley.
Soil: gravel-sand soil.
Vineyards: vineyards facing south; wide difference in temperature between day and night.
Vinification: the grapes are hand-harvested in plastic crates and gently pressed. The must ferments in stainless-steel vats at a controlled temperature. The alcoholic fermentation is stopped by filtering and racking the wine. In spring, the wine is put into an autoclave with its natural sugar for the prise de mousse. Finally, the wine ages in the bottle in the dark of our cellar for a brief time before release.
Tasting notes: slightly sparkling wine; bright pale straw-yellow colour with greenish and copper highlights. Rich nose with floral notes of chamomile and wild flowers, and fruity notes of wild berries and tropical fruit. Crisp and pleasant palate with refreshing creamy bubbles.
Pairing suggestions: excellent as a pre-meal drink, it pairs well with starters, vegetables and fish. Try it on veal with tuna sauce.
Service temperature: best served at about 10 °C in a tulip-shaped glass.
