“Fior del Vento”

Sangue di Giuda dell’Oltrepò Pavese DOC

Sweet semi-sparkling red wine

Vineyards located in: Canneto Pavese.

Soil: the vineyards are located on a south-oriented very steep sloping hillside.

Grapes: Croatina (60%), Barbera (25%) and Uva Rara (15%).

Vinification: after a light pressing of the grapes, the must is kept in contact with the skins for a short but intense fermentation to bring out all the fragrances of the grapes. After the bottling, the wine rests in horizontally stored bottles for an additional period (from 6 to 12 months) .

Tasting notes: slightly sparkling sweet red wine; very intense ruby red colour with purple highlights. On the nose it reveals a rich and winey bouquet, with jellied red fruits in evidence. On palate, it’s pleasant with a long finish and a surprising harmony between the crispness of the tannins and the sweetness of the residual sugar.

Pairing suggestions: it goes very well fruit desserts and pastry. In our region people use to enjoy it also with salami.

Service temperature: best served at a 12-15 °C temperature in a tulip-shaped glass.

Available formats: 0,75 l bottle.

Dante Alighieri
Inferno, Canto III, 46-51
