The Prato Gaio restaurant in Montecalvo Versiggia (PV) will host a special dinner to celebrate the 30 years of the Osterie d’Italia restaurant guide by Slow Food on Friday, November 8th 2019. The event has been organised with the help of Slow Food Oltrepò Pavese delegate Teresio Nardi.
Here’s the menu by Giorgio Liberti and chef Daniela Calvi:
Baccalà, chickpea, potato, fried leek, confit tomato and juniper-flavoured oil salad
Chestnut and borlotti bean creamy soup with Il Boscasso goat milk cheese mousse
Risotto with pumpkin and Porcini dried mushrooms
Slow-cooked pork cheek Guancialino with white wine sauce and polenta little timbale
Persimmon purée served lukewarm with dark chocolate and cinnamon ice cream
Coffee with almond and hazelnut biscuits
The courses of the menu will be paired with the wines of the three Oltrepò Pavese wineries awarded with the Chiocciola prize in the 2020 edition of the Slow Wine guide:
