Location of the vineyards: Montecalvo Versiggia (PV).
Soil: silt-clay soil, vineyards facing east.
Grapes: Pinot Noir (100%).
Vinification: the grapes are hand-harvested into small bins, carefully selecting the best ones. The grapes are then destemmed and softly pressed. The resultant must soaks with the skins for 4 hours. The must ferments then in temperature-controlled stainless steel vats. The wine is bottled in spring and then ages on the lees for about 8 years. After the disgorging, the bottles are topped up with the same wine: no sugar or liqueur d’expédition is added.
Tasting notes: pale copper, onion skin colour. Fine-grained and long-lasting perlage. The nose reveals ripe fruits at first, followed by hints of dried fruits and spices. Dry, well-rounded palate with a long finish.
Suggested pairings: extremely food friendly, it pairs well with a great variety of main courses.
Service temperature: best served at 8 °C in a tulip-shaped glass.
Available formats: 0,75 l bottle and 1,5 l bottle.
